How to start a batch
- Put 20 g of grains into 1 litre of whole milk (10 g into half a litre).
- Cover the jar with a cloth.
- Leave it for 24 hours at 20 to 25°C, strain, and put the grains into fresh milk.
Storing the grains

Real kefir, fresh every morning
Thick, fresh and tangy, with a faint prickle on the tongue. Made with the milk that's already in your fridge.
Creamy and tangy
Fuller than buttermilk, fresher than yoghurt. Straight from the glass, over your granola or stirred through your morning porridge.
Ready in 24 hours
Grains into the milk, cloth on top, and tomorrow you have a litre. About two minutes of work a day.
They grow with you
The grains get bigger with every batch. After a few weeks you can use more milk or pass your surplus on.
From traditional methods
Our cultures come from traditional methods: unique and vigorous. They're at work from the very first jar.
Your first kefir in 24 hours
Milk into the jar
Pour 1 litre of whole milk (the blue top) into a clean glass jar. Cow's, goat's or sheep's milk, pasteurised or straight from the farm.
Add the grains
Add the 20 g of grains, give it a quick stir and cover the jar with a cloth and an elastic band.
Wait and strain
24 hours at 20 to 25°C. When the milk has thickened and smells fresh and sour, strain it and put the grains into fresh milk.
10 g or 20 g?
| 10 g | 20 g | |
|---|---|---|
| Kefir a day | Half a litre | 1 litre |
| Best for | Trying it out, one person | The whole household, cooking and baking |
| Milk per batch | Half a litre of whole milk | 1 litre of whole milk |
| Fermentation time | 24 hours at 20 to 25°C | 24 hours at 20 to 25°C |
| Jar | A little over half a litre | A little over 1 litre |
With 10 g you start gently, and because the grains grow, you'll be up to a litre a day before long. Would you like a sparkling drink alongside it? The kefir duo adds water kefir grains and costs less than buying the two separately.
The buttermilk swap, and plenty more
Buttermilk turns up in plenty of British baking, from scones to Pancake Day batter, and it's never in the fridge on the day you need it. Milk kefir does the same job, and you never have to run out for a carton again. Use it cup for cup in scones, drop scones or a quick wholemeal loaf: it reacts with the bicarb in exactly the same way, giving a good rise, a soft crumb and that gentle tang. The differences in taste and in use are covered in kefir or buttermilk?
Beyond baking, kefir goes wherever you'd use yoghurt or buttermilk now. Stirred into oats the night before as kefir overnight oats, blended into a banana kefir smoothie, or hung in a cloth overnight for a soft strained kefir cheese to spread on toast or warm crumpets. It also makes a lovely moist kefir apple cake with Bramleys in the autumn.
Which milk works best, and how to make your kefir thicker or thinner, is explained in the best milk for kefir and milk kefir too thin or too thick.

Great client service I ordered kombucha SCOBY and water kefir grains and when the package arrived, a part of the kefir was missing. Client service was very quick at sending me the missing item. Both grains and SCOBY are producing great drinks.
Juliette MaysReview on TrustpilotExcellent service and fantastic culture kits!Highly recommended! I recently purchased the culture kits for both water kefir and kombucha, and I couldn’t be happier! The package arrived right on time and was packed with so much care. To be honest, I was a bit nervous at first, but the instructions are incredibly clear, thorough, and easy to follow (the included booklet is an amazing guide if you're a beginner like me!). Both cultures worked perfectly on the very first try, and the drinks taste absolutely delicious.
