Your own lemonade, alive and fresh from the jar
Water kefir is the easiest sparkling drink you can make at home: fruity, not too sweet, and fresh every single day.
A fine, lively fizz
Fresh, lightly tart and fruity, like a lemonade that makes itself. It has very little in common with a can of fizzy orange.
Ready in 24 hours
Two minutes in the morning, and by the same time tomorrow there's a litre chilling in the fridge.
Keeps going for years
The grains grow from batch to batch. Look after them a little and the same pouch keeps you in water kefir for years.
From traditional methods
Our cultures come from traditional methods: unique and vigorous. They start strong and forgive the odd forgotten day.
Your first litre in 24 hours
Mix
Dissolve 4 tablespoons of sugar in 1 litre of water. Drop in a dried fig and a slice of lemon.
Add the grains
Tip the 30 g of grains into the jar with their liquid, no rinsing needed. Cloth over the top, elastic band round it.
Wait and strain
24 hours on the worktop at 20 to 25°C. When the fig floats, strain, pour the kefir into a swing-top bottle and start a fresh batch.
30 g or 60 g?
| 30 g | 60 g | |
|---|---|---|
| Water kefir a day | 1 litre | 2 litres |
| Best for | One or two people | Families, or two flavours on the go at once |
| Water per batch | 1 litre | 2 litres |
| Sugar per batch | 4 tablespoons (about 60 g) | 8 tablespoons (about 120 g) |
| Dried fig and lemon | 1 fig, 1 slice | 2 figs, 2 slices |
| Jar | A little over 1 litre | A little over 2 litres |
Not sure? Start with 30 g. The grains grow, and within a few weeks you'll have enough for 2 litres a day anyway. Fancy two different drinks from day one? Have a look at the water kefir and kombucha set, which works out cheaper than buying both on their own.
Nearly everything is already in your kitchen
A glass jar of a little over a litre, a plastic or stainless steel sieve, a clean cloth with an elastic band, and a swing-top bottle for the second fermentation. Then sugar (white or cane sugar), water, a packet of dried figs and an unwaxed lemon. That's the lot. The full method, with every measurement, is in how to make water kefir.
Ordinary tap water works for most people. It's chlorinated, so either leave a jug to stand overnight or boil it and let it cool before you use it. Hard water in London, the South East and East Anglia and soft water in Scotland, Wales and the North West both make good kefir, the batches just taste a little different. A private water supply is fine too, as long as you'd happily drink it yourself. The details are in water and sugar for water kefir.
The fun starts in the bottle. Add some fruit, close it and leave it for 24 to 48 hours: strawberries, raspberries, a few slices of ginger, rhubarb from the garden, or a couple of elderflower heads from the hedgerow in June. Ideas to get you going: strawberry water kefir, lemon and ginger water kefir, elderflower water kefir and rhubarb water kefir. How to get more fizz is explained in the guide to the second fermentation.

Great client service I ordered kombucha SCOBY and water kefir grains and when the package arrived, a part of the kefir was missing. Client service was very quick at sending me the missing item. Both grains and SCOBY are producing great drinks.
Juliette MaysReview on TrustpilotExcellent service and fantastic culture kits!Highly recommended! I recently purchased the culture kits for both water kefir and kombucha, and I couldn’t be happier! The package arrived right on time and was packed with so much care. To be honest, I was a bit nervous at first, but the instructions are incredibly clear, thorough, and easy to follow (the included booklet is an amazing guide if you're a beginner like me!). Both cultures worked perfectly on the very first try, and the drinks taste absolutely delicious.
